Mexican Street Corn Salad

Ingredients

  • 3 cups corn
  • 1 clove garlic, minced
  • 2 tbsp lime juice
  • 1/4 tsp salt
  • 1 cup black beans, drained and rinsed
  • 1 red bell pepper, seeded and chopped
  • 1/2 cup packed cilantro
  • 1/2 cup fotija or feta cheese

Dressing:

  • 1/2 cup plain non-fat greek yogurt
  • 1 tbsp lime juice
  • 1 tsp honey
  • 1/2 tsp paprika
  • 1/4 tsp cumin

Instructions

  1. Cook corn and garlic until charred. Add lime and salt.
  2. Add in other ingredients and then the dressing.
