Lemon Garlic Butter Chicken with Green Beans

Ingredients

  • 3-6 boneless, skinless chicken thighs
  • 1 lb green beans, trimmed
  • 3 tbsp butter, divided
  • 1 tsp paprika
  • 1 tsp onion powder
  • 1/4 tsp salt & black pepper
  • juice of 1/2 lemon
  • 1/2 cup chicken stock
  • 1 tbsp hot sauce – sriracha
  • 1/4 tsp crushed red pepper
  • 1/2 cup fresh parsley
  • 4 garlic cloves minced

Instructions

  1. In a small bowl, combine onion powder, paprika, salt, and pepper. Season chicken thighs generously with spice mixture. Set aside and prep green beans.
  2. Arrange green beans in microwave safe dish with 1/2 cup water. Cook in microwave for 8-10 minutes.
  3. Melt 2 tbsp butter in large skillet over medium-low heat. Lay the seasoned chicken thighs in one layer in large skillet. Cook for 5-6 minutes then flip and cook 5-6 more minutes until cooked through. If chicken browns too quickly, lower the heat. Transfer chicken to plate and set aside.
  4. In same skillet, lower heat and melt 1 tbsp butter. Add parsley, garlic, hot sauce, red pepper, and green beans. Cook 4-6 minutes. Add lemon juice and chicken stock. Cook until thickened.
  5. Add chicken back to the pan to reheat and serve.
