One Pot Spicy Rigatoni

Ingredients

  • 1 tbsp butter
  • 1/2 white onion, diced
  • 5 garlic cloves, minced
  • 2 tbsp red pepper flakes
  • 16oz uncooked rigatoni
  • 20oz marinara
  • 4 cups chicken broth
  • 1 tsp salt
  • 3/4 cup heavy cream

Instructions

  1. Place butter in large pot over medium-high heat. Add onions and garlic.
  2. Sprinkle on the red pepper and mix together. Allow onions and garlic to soften in the pot (1-2 minutes).
  3. Add uncooked pasta to the pot, followed by the marinara, broth and salt. Mix it all together and bring it up to a soft boil to cook the pasta. Cover and reduce heat for 12-13 minutes.
  4. When the rigatoni is cooked to perfection, add the heavy cream and parmesan. Mix over medium heat until sauce comes together.
  5. Garnish with parmesan and parsley.

Tips

  • Made this with meatballs and summer veggies. It was delicious.
