Lemon Garlic Butter Chicken with Green Beans
Ingredients
- 3-6 boneless, skinless chicken thighs
- 1 lb green beans, trimmed
- 3 tbsp butter, divided
- 1 tsp paprika
- 1 tsp onion powder
- 1/4 tsp salt & black pepper
- juice of 1/2 lemon
- 1/2 cup chicken stock
- 1 tbsp hot sauce – sriracha
- 1/4 tsp crushed red pepper
- 1/2 cup fresh parsley
- 4 garlic cloves minced
Instructions
- In a small bowl, combine onion powder, paprika, salt, and pepper. Season chicken thighs generously with spice mixture. Set aside and prep green beans.
- Arrange green beans in microwave safe dish with 1/2 cup water. Cook in microwave for 8-10 minutes.
- Melt 2 tbsp butter in large skillet over medium-low heat. Lay the seasoned chicken thighs in one layer in large skillet. Cook for 5-6 minutes then flip and cook 5-6 more minutes until cooked through. If chicken browns too quickly, lower the heat. Transfer chicken to plate and set aside.
- In same skillet, lower heat and melt 1 tbsp butter. Add parsley, garlic, hot sauce, red pepper, and green beans. Cook 4-6 minutes. Add lemon juice and chicken stock. Cook until thickened.
- Add chicken back to the pan to reheat and serve.
