Mexican Street Corn Salad

Ingredients
- 3 cups corn
- 1 clove garlic, minced
- 2 tbsp lime juice
- 1/4 tsp salt
- 1 cup black beans, drained and rinsed
- 1 red bell pepper, seeded and chopped
- 1/2 cup packed cilantro
- 1/2 cup fotija or feta cheese
Dressing:
- 1/2 cup plain non-fat greek yogurt
- 1 tbsp lime juice
- 1 tsp honey
- 1/2 tsp paprika
- 1/4 tsp cumin
Instructions
- Cook corn and garlic until charred. Add lime and salt.
- Add in other ingredients and then the dressing.
